1 purple sweet potato red pigment from the plant ipomoea convolvulaceae natural edible pigment extracted from the 

anthocyanins, flavonoids composition.
 

2 products for the purple liquid, soluble in water and ethanol-water, but insoluble in oil, anhydrous ethanol.
 

3 by its hue and stability of the ph effects: acidic steady red or purple;-neutral blue; alkaline was unstable green.
